2 9-inch Cake Layers

What you will need:

Margarine (for greasing cake pans)
2 1/2 cups sifted flour
4 teaspoons baking powder
1/2 teaspoon salt
1 1/4 cups sugar
2 eggs
3/4 cup (12 tablespoons, or 1 1/2 sticks) margarine, softened
3/4 cup milk
1 teaspoon vanilla extract

What to do next:

1. Preheat oven to 350 degrees. Grease 2 9-inch round layer cake pans.
2. Mix flour, baking powder, salt, and sugar together, then sift them into a bowl.
3. Break eggs into large bowl. Add the margarine, milk, and vanilla and beat with a spoon until light and fluffy.
4. Stir the flour mixture into the egg mixture a little at a time, then beat with an egg beater until the batter is creamy.
5. Pour batter into cake pans. Make sure you make both even.
6. Place pans on center rack of oven. Bake for 25-30 minutes. Cool in pan for 5 minutes. Then circle a knife around edges of layers and turn them upside down onto a wire rack to finish cooling. ~~~~~~~~~~~~~~~ ;o)
