Frostings For Your Cakes And Cupcakes

Vanilla Cream Frosting

What you will need:

1/2 cup (1 stick) margarine, softened
3 cups sifted confectioners' sugar
4 tablespoons milk
1 teaspoon vanilla extract

What to do next:

1. Put the softened margarine in a large mixing bowl. Cream it until soft and fluffy with a spoon.
2. Slowly mix in 1 cup of the sugar. Then mix in 2 tablespoons of the milk. Mix in another cup of sugar and another tablespoon of milk. Then mix in the rest of both. The mixture should be creamy so it will be easy to spread.
3. Add the vanilla and beat with eggbeater until frosting is light and fluffy. If you want a softer frosting, stir in another tablespoon of milk.

TIP: Beat in food coloring along with the vanilla to make a frosting that's any color of the rainbow. Add it a few drops at a time until you have the color you want.

Chocolate Frosting

What you will need:

4 squares (4ounces) unsweetened chocolate
1 can (14 ounces) sweetened condensed milk
1 tablespoon water

What to do next:

1. Fill the bottom half of a double boiler with water. Put the top half in place. Make sure that it doesn't touch the water. Put the double boiler over low heat.
2. Put the chocolate in the top of the double boiler and let it melt, stirring it every once in a while.
3. Slowly stir the milk into the melted chocolate. Turn the heat up to medium. Cook for 4 minutes, stirring constantly, until the mixture thickens.
4. Turn off the heat. Stir in the water.
5. Let the frosting cool for a few minutes before you spread it on.
