Delicious Cupycakes



What you will need:

Margarine (for greasing muffin pan)
1/2 stick margarine, softened
1/2 cup sugar
1 egg
1 cup sifted flour
3 teaspoons baking powder
1/2 cup milk
1 teaspoon vanilla extract

What to do next:

1. Preheat oven to 350. Grease muffin pan. (if you have paper muffin cup liners, you can put 1 in each cup and skip greasing the pan)
2. Put the margarine and sugar in a large mixing bowl. Cream them together until they are soft and fluffy with a spoon.
3. Break the egg into the bowl and beat well with a fork.
4. Sift the flour with the baking powder. Add to the margarine mixture and stir. Then add the milk and vanilla. Beat with an eggbeater until smooth.
5. Pour batter into muffin pan, filling each cup half way.
6. Bake for 20-25 minutes. Let the cupcakes cool for 5 minutes, then remove from pan to finish cooling. (To help loosen them, circle a knife or spatula around edges.)
Makes 12 cupcakes

Chocalate Chip CupCakes

Stir 1/2 cup chocalate chips into the batter at the end of step 4.

Peanut Butter CupCakes

Add 3 tablespoons peanut butter to the batter when you add the egg in step 3.
